Black Bean Brownies – Low Sugar

Black Bean Brownies.  SO Awesome!  Few things are more delicious and satisfying than healthy desserts and brownies!  I love black bean brownies, because they taste very much like the good ole’ oil, sugar, egg, white flower and chocolate chip variety, but are much better for you!  This recipe is gluten-free, and developed from the same recipes from Skinnytaste.com and The Roasted Root.  Mine is different in some of the ingredient numbers, and I used stevia in much of it to make it a lower-sugar option (which personally always sits better with me).  I also added vanilla, salt, an egg white, and water in place of almond milk (I didn’t have any on hand!).  Finally, the original recipes call for canned beans, which you could also use.  We buy in bulk and cook dry beans as needed.

8″ x 8″ glass pan

Bake at 350 degrees F. for 20 minutes

Cool for 20 minutes

Total time:  40 minutes

Serves:  9-16 (depends how you cut it!  😉 )

Ingredients:

6 Tablespoons cocoa powder (which is equal to 1/4 cup + 2 Tablespoons, if that is easier for you to measure)

1/4 cup coconut palm sugar

1 Tablespoon (or about 8 packets) of stevia sugar substitute

1/2 teaspoon baking powder

1 teaspoon instant coffee

pinch of salt

2 cups cooked, rinsed black beans

2 whole eggs + 1 egg white

1/2 teaspoon avocado oil

1 Tablespoon water

1 teaspoon apple cider vinegar

1/2 teaspoon pure vanilla extract

1 cup semi-sweet chocolate chips

Directions:

  1. Preheat oven to 350 degrees. 
  2. In a medium-sized glass bowl, whisk together “dry” ingredients until thoroughly combined.  Cocoa powder, sugar, stevia, baking powder, instant coffee,  salt.  Sit aside.
  3.  In a food processor, blend remaining ingredients (excepting chocolate chips!) until combined.  Black beans, eggs, oil, water, vinegar, vanilla.  
  4.  Add “dry” mix and continue to blend until combined.
  5. Transfer mix to glass bowl and fold in chocolate chips.  Optionally, reserve 1/4 – 1/2 cup to garnish on top.
  6. Spread even into parchment lined 8 x 8 glass pan.
  7. Bake at 350 degrees F for 20 minutes (it should look a bit dry on top).
  8. Cool for 15-20 minutes before serving.

NOTE:  Best taste will come after refrigerating the brownies overnight. . . I think the chocolate must really soak into the beans that way.  Highly recommended! 🙂

  1. Let’s be lazy! Throw all of the ingredients in a food processor, blend, fold in half the chips, pour in pan, top with other half of chips. Bake. Done. Amazing 😉
