Watermelon Salad – DELICIOUS!!!

Watermelon salad rocks!!!  This is seriously one of the most delicious salads I have had in a long time!  I was so excited about making it the first time yesterday, that I’m eating it again today as I type this!  It is so good and so easy!  Only seven ingredients!!watermelon-salad-to-eat-pray-love

One of my good friends just shared with me a delicious vinaigrette recipe:   balsamic vinegar, olive oil, mustard, maple syrup, salt and pepper (I think that’s it!).  This was delicious, but I wanted a dressing that didn’t have the extra sugars or fat.  This is where my inspiration came from, and from too much watermelon in the fridge!  

Who doesn’t love watermelon?  This very fresh, delicious, sweet and salty blend puts other summer salad recipes to shame!  The mix prior to the spring mix or lettuce base is reminiscent of a watermelon salsa, which would also be really good.  I used sweet yellow peppers that paired so beautifully with the watermelon.  This recipe is really, really one of my new favorites, and I’m so excited to share it with you!

Watermelon Salad Recipe

Ingredients:

Cubed watermelon (seedless, or remove the seeds)

Chopped yellow peppers

Shredded carrots

Balsamic Vinegar

Grainy seeded mustardWatermelon, fruit, healthy recipes

Salt and Pepper

Spring mix or other favorite lettuce base

Directions:

  1.  In a medium bowl, mix together watermelon, peppers, carrots, balsamic, mustard, and salt and pepper until evenly coated.
  2. Toss over spring mix or other salad base and enjoy!
  3. Serve immediately! 🙂

Personalize it!

The second time around I left out the carrots and it really didn’t change the flavor or texture much.  Give it a try, and don’t be afraid to personalize it using a different balsamic or mustard!  (I used a generic balsamic and grainy mustard from Aldi!)  My watermelon was very sweet – right on the cusp of going bad.  Oh my goodness.  The balsamic and mustard revived it and the sweet / salty flavors made this salad my new favorite summer salad recipe!

Let me know what you think!  What other vegetables might have paired well in this blend?  You could also try adding olive oil for added fat, or some type of root vegetable chip or crouton for added crunch!
