Mini Pumpkin Muffins

Of all the great pumpkin recipes out there, muffins have always been one of my favorites!  I have to admit, one of the first times that my husband came over to my apartment was to enjoy some of my pumpkin muffins, so it wouldn’t make sense for me not to include these delicious, really easy, really quick mini pumpkin muffins in my list of great pumpkin recipes.  I hope you enjoy them too!  One of the best parts?  Made from a base of almond butter, they’re gluten free, too!

Mini Pumpkin Muffins:

Ingredients:

1 cup homemade almond butter

2/3 cup pumpkin puree

1/4 cup organic maple syrup

1 Tablespoon pumpkin pie spice (or 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground cloves and 1/4 teaspoon ground nutmeg)

1 teaspoon pure vanilla extract

a pinch of salt

ground cinnamon (to garnish)

Directions:

1.  Preheat your oven to 350 degrees.

2.  In a medium mixing bowl, combine pumpkin and almond butter until smooth and consistent.

3.  Add maple syrup, pumpkin pie spice, vanilla, and a pinch of salt, and stir until combined.

4.  Spoon into mini muffin liners or a (coconut oil) greased mini muffin pan.  Top with cinnamon.

5.  Bake for 10-15 minutes, or until tops look dry and muffin-like, even beginning to brown, but be sure not to burn them!

6.  Remove from pan to cool and enjoy!
