Healthiest Pumpkin Pie Recipe

This is a delicious and easy pumpkin pie recipe that bakes in just 45-60 minutes, has no crust, and tastes great!

Everyone loves pumpkin pie, but many don’t want the extra sugar that come with many prepackaged fillings, want their pie to be gluten-free or without crust all together, and/or want the freedom of dairy-free and vegan.  This recipe is all of that and more (nut-free too!).  If interested in a crust, feel free to start with my delicious pecan pie crust recipe, OR the same crust I used for my delicious healthiest pumpkin cheesecake recipe!  Both are outstanding!

Pumpkin Pie Recipe

Pumpkin Pie Recipe

Ingredients:

4 cups pure all-natural pumpkin (2 cans)

1/2 cup organic maple syrup (I prefer the flavor of Grade B, but Grade A is easier to find and will work just fine)

2 organic, cage-free eggs (or flax egg substitutes!)

Pumpkin Pie Recipe Ingredients

1 Tbs coconut oil

1 tsp pure vanilla extract

1 Tbs pumpkin pie spice

1/4 tsp sea salt

1/2 tsp ground cinnamon

Directions:

1.  Preheat oven to 375 degrees Fahrenheit.

2.  In a large mixing bowl, combine all ingredients (reserving the ground cinnamon for the end) and blend well, either with a hand mixer, immersion blender, or by mixing thoroughly.

3.  Grease a round pie pan with a minimal amount of coconut oil.

4.  Transfer pie mix from large bowl into pie pan and smooth so the mixture it even throughout.

5.  Top with ground cinnamon and bake for 45 minutes to 1 hour, or until the pie begins to crack and pull away from the edges.

6.  Cool completely or enjoy warm!  (Also tastes great a la mode!)
