As we (sadly) close out our ‘Summer’ recipes for this year, giving way to the much anticipated pumpkin frenzy (coming in September!) – here is another zucchini favorite:  Hearty Zucchini Bread!

Zucchini bread is one of those “too good to be true” types of desserts.  It can also be served as a delicious breakfast, brunch, snack, or side.  It is hearty and delicious, lightly sweet, moist, and nutritious.  This recipe utilizes 100% whole wheat flour, so it is not Gluten Free.  The cinnamon, ginger, and clove blend so well to give this zucchini bread a little spice, and the pecan, walnut, and chopped date topping make it the best zucchini bread I have ever had!  Perfect for that late, end of season crop, this zucchini bread will have you reaching for seconds (and it isn’t that bad if you do!).

Zucchini Bread Recipe:

Ingredients:

3 cups 100% whole-wheat flour

1 Tbs ground cinnamon

1 and 1/2 tsp baking soda

1/4 tsp baking powder

1/2 tsp fine sea salt

1/2 tsp dried, ground ginger

1/2 tsp clove

3 flax egg substitutes (3 Tbs flax meal, 6 Tbs water)

1/2 cup all-natural, unsweetened applesauce

Zucchini Bread Cooling

1/4 cup coconut oil

1/2 cup honey (or agave if you are vegan)

1 tsp vanilla

3 cups shredded (grated) zucchini

1/4 cup chopped dates

1/2 cup chopped pecans

1/2 cup chopped walnuts

Directions:

1.  Preheat oven to 325 degrees.

2.  Combine all dry ingredients:  whole wheat flour, cinnamon, baking soda, baking powder, salt, ginger, and clove, in a large bowl and whisk together until completely combined.

3.  In a smaller bowl, combine all wet ingredients, flax eggs, applesauce, coconut oil, honey, and vanilla, and mix well.

4.  Knead together wet and dry ingredients by adding the contents of the smaller bowl to that of the larger bowl.

5.  Fold zucchini into mixture and thoroughly combine.

6.  Stir in chopped nuts and dates, reserving 1/2 cup for topping.

7.  Pour into greased loaf pan or muffin tins and top with remaining nuts and dates, pressing into top.

8.  Bake for 45-60 minutes, or until a knife comes out clean.

9.  Cool completely and enjoy!
