Mom’s Original Zucchini Chocolate Cake Recipe

As soon as my husband tasted my mom’s zucchini chocolate cake, I was sure I would be making it again and again!  And, I was right!  But we both often prefer the healthier, heartier version of things, so I assigned myself the challenge of recreating this delicious summer treat without dairy and with less sugar and fat.  Of course, my mom’s version is ultimately the winner in this competition, as oil, butter and refined sugar and flour usually do make things more fluffy and comforting than the healthier alternatives.  But my version can definitely hold it’s own, and has been requested year and again for a very special birthday treat!  Here is my Mom’s Original Zucchini Chocolate Cake Recipe:

Zucchini Chocolate Cake

Ingredients:

1 stick of butter

1/2 cup of oil

1 and 1/2 cups of sugar

1 egg

Zucchini Chocolate Cake Birthday Cake1 teaspoon vanilla

1/2 cup sour milk

2 and 1/2 cups flour

4 Tablespoons cocoa

2 teaspoons baking soda

2 cups shredded zucchini

1 package of chocolate chips

Directions:

Cream butter, oil and sugar.  Add egg, milk and vanilla.  Mix well.  Stir flour, cocoa and baking soda together in separate bowl.  Gradually add dry mix to creamed mix using spoon.  Stir well.  Add zucchini last.  Pour into 9×13″ pan.  Sprinkle chocolate chips on top.  Bake at 325 degrees for 45-50 minutes.
