Coming out of the Winter drags, holiday splurges, and cold season, and scrounging with all my might for the springy step of Spring (even if the weather won’t cooperate here in NJ!), I’ve been focused on detoxing!  This time I turned to the beloved Natalia Rose at detoxtheworld.com.  Natalia is a huge proponent for detox for women through food combining, among other things.   (To read more about food combining, check out Megan’s blog here.)  All of this, to say that I have been making a lot of my favorite chocolate milk juice recipe.  A lot.  And one of my most recent favs have been to recycle the juice pulp leftovers later in the day.  Mostly, this makes calorie counting and nutrition guiding easier (I don’t have to take out the pulp portion when weighing the facts in my juices!).  But, it’s also made for some really rockin’ juice pulp recipes!  If you haven’t tried it yet, go for red beet juice burgers.  They are amazing!!  And vegan.  And amazing.

Chocolate Milk Juice

World’s Best Veggie Pizza Recipe:

Crust Ingredients:

One 12oz bag of frozen cauliflower (you can also just use your own fresh cauliflower, but this is what I had in the house!)

1 cup of frozen chopped spinach (same deal as the cauliflower)

1 cup carrot and romaine juice pulp (leftover from chocolate milk juice amazing)

2 organic, cage-free eggs

1 teaspoon minced garlic

1 teaspoon fresh or dried parsley (I used dried, but fresh would probably be much more flavorful!)

Pizza Toppings:

1/2 cup marinara or tomato sauce of choice (I used fresh tomato basil sauce leftover from our pasta night 😉 – you could even try a cheese sauce!)

2 oz goat cheese feta*

sliced black olives*

chopped broccoli*

Veggie Pizza Crust Ingredients

sliced peppers *

sliced mushrooms*

crushed red pepper flakes*

oregano*

sea salt*

cracked black pepper*

garlic powder*

*all optional and to taste

Directions:

1. Preheat oven to 400 degrees F.

2.  Pour contents of 12 oz frozen cauliflower bag in a large microwave-safe bowl and microwave for 3 minutes, to thaw (or, thaw before hand).  If there is any juice or water, pour off, and transfer to food processor or blender.

3.  Add two eggs, teaspoon of minced garlic and teaspoon of parsley flakes and blend until just smooth.

4.  Transfer back to mixing bowl and add vegetable juice pulp (really any type of vegetable juice pulp should work well for this!) and cup of frozen spinach.  Mix together.

5.  Press veggie pizza dough on a parchment lined pizza pan and spread evenly.

6.  Bake for 10 minutes, then remove.

7.  Flip pizza dough over by covering with another layer of parchment, a second pizza pan, and flipping.  Return to oven for an additional 10 minutes.

8.  After a total of 20 minutes of baking at 400 degrees, the pizza crust should be dry to the touch.  Spread 1/2 cup of pizza sauce of your choice over the top, and top with vegetables as desired (even black olives and feta!) SOOOO GOOOD!!!!!  I also topped with spices as listed above, but get creative!

9.  Return to oven for a final 10 minutes and viola!  The World’s Best Vegetable Pizza!

Best part?  Half of this tasty pie is only 370 calories, it’s gluten-free, it’s vegetarian, and it’s Amazing. . . oh yeah! 🙂

Notes
  1. If you do not flip pizza in step 7, it will come out a little more moist than if you do flip it. In that case, it may be a little difficult to slice and transfer like a pizza.

  1. This is a wonderful recipe. I am on a low carb diet and this is a great meal for me. Thanks Brooke. I also use essential oils to supplement my diet through Young Living. It would be a great addition to what you do here. Check it out.

    1. Thanks, Kathy! If you don’t juice vegetables, you can also process into a pulp or ground frozen (and then cooked) vegetables – just blot dry or press to get all of the liquid out 🙂 I have also done with recipe with just cauliflower – just use two bags and see how you like it!
